New Jersey’s Sum Ramen, with locations in Millburn and Westfield, is gaining attention for its innovative dishes, driven by 17-year-old chef Matthew Cheung. Established in 2020 by restaurateur Sum Yeung, the family-owned restaurant has become known for its quality ramen. The younger Cheung, a self-taught cook, has been pivotal in shaping the menu, introducing new dishes that challenge traditional ramen norms.

Sum Ramen’s first location opened in Millburn during the pandemic and quickly built a loyal following. The Westfield branch followed, featuring a distinct atmosphere with anime figurines and vintage décor, reflecting the family’s unique approach to dining.

Matthew, who began cooking at age 10, has been instrumental in the restaurant’s culinary evolution. His summer menu, featuring dishes like Dan-Dan Mazeman and Zaru Soba, highlights his ability to balance flavors and textures. His creations are also showcased on his Instagram account, @automated_rice_cooker, where he shares a variety of inventive dishes.

As Matthew prepares to introduce a new “Kids Menu” pop-up in September, designed specifically for teens, his influence in the culinary world is set to grow. While managing his senior year at Millburn High School, he continues to push boundaries in the kitchen.
