Now that the cafes are closed due to COVID_19, let’s fill our homes with fresh baked muffin aroma at home. These muffins are very easy to make, quick to bake, have crusty golden tops and moist fluffy interior. Perfect for your cuppa ☕️. . They are wonderful to make with kids (science happens in the kitchen), partners or on your own. Can be frozen and reheated again in the oven. Buttermilk can be substituted with kefir, yogurt or sour cream. Eggs could be replaced by flax meal. Here is the recipe: Mixed Berry Buttermilk muffins * 2 1/2 cups all-purpose flour * 3/4 cups sugar (raw cane) * 1 1/2 tsp baking powder * 1/2 tsp baking soda * 1/4 tsp salt * 1 cup buttermilk * 1/2 cup light oil (olive or avocado) * 2 eggs * 1 1/2 tsp vanilla extract * 1 1/2 cups frozen (or fresh) berries * 3–4 tsp turbinado sugar (optional) Tip 1: mix berries with a bit of flour to prevent sinking Tip 2: prepare dry mixture, then wet; mix gently then fold in the berries – do not overmix Tip 3: always preheat the oven before baking Have a go and let me know what you think. #thebakefeed @thebakefeed #feedfeed @thefeedfeed @food52 #f52 #f52grams #gloobyfood #kitchenbowl #foodwinewomen #kingarthurflour #marthafood #iamsomartha #cupcakeproject #blueberrymuffins #thesugarfiles #bakersfonnabake #bakebakebake #eatprettythings #makeitdelocious #thesugarfiles #bareaders #wsbakeclub #stayinghome #driscolls #stayhomechallenge #phototips #anthroliving #sparkjoy #gotovim_doma_ #foodstylingandphotography #webelieveinhome #naughtyteas #isolationcreation
