A California-born ice cream sandwich shop is bringing its hot-pressed frozen treats to Princeton, adding to a growing network of New Jersey locations.
The Baked Bear, a custom cookie and ice cream sandwich concept founded in San Diego in 2012, will open at 41 Witherspoon Street in Princeton. The shop already has four New Jersey locations in New Brunswick, Westfield, Asbury Park, and Long Branch. The Princeton store will be the fifth in the Garden State.
The concept is simple: customers build their own ice cream sandwich, picking from a list of fresh-baked cookies and ice cream flavors, including vegan and gluten-free options. Then, the fun part—you can opt to get your sandwich hot-pressed, heating up the cookie and just slightly melting the ice cream. The result is a gooey, sweet, and cohesive frozen treat, unlike most ice cream sandwiches you’ve tried.
Cookie options include a classic chocolate chip, a blue “Cookie Monster” cookie with white chocolate chips, gooey butter cake cookie, vegan gluten-free brownie cookie, and a cinnamon-laced snickerdoodle, among others.
Ice cream flavors run from Bear Batter (blue cake batter with brownies and sprinkles) to blackberry crumble, mint chip, caramel pretzel fudge, strawberry shortcake, and vegan chocolate chip.
Finally, the toppings. Add Fruity Pebbles, sprinkles, hot fudge, whipped cream, Heath Bar bits, brownie bites, and more to your ice cream sandwich.
The Baked Bear was founded by childhood friends Rob Robbins and Shane Stanger, who left their careers to open the ice cream shop. It started with a single location in Pacific Beach, California in 2013 and has expanded to 12 states since.
The Baked Bear will open later this year in Princeton, NJ. No opening date has been announced at this time.
