Colonial Grill, a food truck with a cult following, just opened its very first brick and mortar after more than a decade of serving steak frites, burgers, and more out of a food truck in Morristown.

Morris County locals shouldn’t worry, the truck isn’t going anywhere. But now, Colonial Grill will have an official storefront to expand its operation.

Lucky for us, now more people can experience what’s earned the truck 50 million views across social media.

Colonial Grill will open at 210 Hudson Street in Jersey City, just one month after the company’s kitchen suffered a serious fire. They tested the waters with a few pop-ups at the space in July and August. Now, they’re open for good.

William Valbuena opened the food truck in 2015 and quickly garnered a following for his Latin-inspired menu, which puts his roots on full display. His son Kevin works beside him.

Thick, juicy burgers sandwiched between crispy tostones, gyros, maduro-stuffed cheesesteaks, and the famous steak and fries, which features sirloin steak, hand-cut fries, garlicky cilantro sauce, and truffle chimichurri. The dish went viral on social media for its incredible value at $24.50.

In July, Colonial Grill’s commercial kitchen suffered a serious fire. Through an outpouring of support, they bounced back immediately, landing a new kitchen two days later and having both trucks back open that same week. “This month took a lot of time, energy, patience, sacrifice, and sleep, but ultimately, it was God’s plan,” said Colonial Grill in an Instagram post. “We are so blessed and happy to now have a storefront in Jersey City. My father and I are truly appreciative of every single one of you who continues to come out and support us.”

As of this week, Colonial Grill has three locations, the original Morristown truck (located at 3 Park Place), the weekends-only truck at Pier A in Hoboken, and the Jersey City storefront.

Hours are 11 a.m. to 7 p.m., Tuesday through Sunday.
