Our review team recently had the pleasure of dining at Halifax, a culinary gem nestled in the heart of Hoboken, New Jersey. Executive Chef Seadon Shouse puts an emphasis on local ingredients at this seafood-rich gem. From the moment I stepped into the restaurant, I was captivated by its sophisticated and inviting ambiance. The friendly staff welcomed me with warm smiles and guided me to my table, setting the stage for what would be an extraordinary dining experience

To begin my gastronomic journey, I opted for the seafood tower, an impressive display that showcased the finest treasures of the sea. As the tower was presented before me, I couldn’t help but be amazed by its grandeur. Local oysters, top neck clams, poached shrimp, a succulent lobster tail, and a delicate bass tartar adorned the tower, enticing both my eyes and my taste buds. The freshness of the seafood was undeniable, and each bite was a burst of oceanic flavors. Accompanied by crispy crostini, this extravaganza was a true delight for seafood enthusiasts like myself.

Scallop Carpaccio

Continuing on my culinary adventure, we sampled the sea scallop carpaccio. The thin slices of tender scallops were artfully arranged on the plate, accompanied by a vibrant kohlrabi slaw that added a refreshing crunch. The horseradish remoulade provided a subtle kick, complementing the delicate flavors of the scallops perfectly. Local cucumbers added a crisp element, while the dill oil and lemon dressing brought a zesty brightness to the dish. Every forkful of this dish was an exquisite symphony of flavors, showcasing the chef’s impeccable attention to detail.

The lamb meatballs were a pleasant surprise, as they offered a departure from the seafood-centric dishes. The meatballs were impeccably seasoned and had a melt-in-your-mouth texture that spoke of culinary expertise. Served with a tantalizing sauce and accompanied by thoughtfully selected accompaniments, these meatballs were a testament to the chef’s skill in blending flavors. The dish was a perfect marriage of hearty and savory notes, leaving me wanting more with each bite.

Lamb Meatballs

Moving on to the main courses, the Jonah crab bucatini proved to be a standout. The pasta was cooked to perfection, al dente and coated in a rich, flavorful sauce that showcased the sweetness of the Jonah crab. The combination of flavors was exquisite, and the dish was expertly balanced with a deep savoriness from an umami-rich miso butter. Each twirl of the bucatini revealed generous chunks of succulent crab, making every mouthful a moment of pure bliss.

The Rabbit Milanese was another impressive display of Chef Seadon Shouse’s culinary prowess. The tender rabbit cutlet was breaded and pan-fried to a golden perfection, resulting in a satisfyingly crisp exterior. The meat remained succulent and tender, and the dish was enhanced by a thoughtful accompaniment of fresh greens and a tangy green goddess dressing. The flavors were harmonious, and the presentation was a feast for the eyes. This dish exemplified the restaurant’s commitment to showcasing unique and inventive dishes that excite the palate.
