A Jersey City chef takes his talents to national television this week.
Bryan Girón—chef and owner of Perquín in Jersey City—will appear on Food Network’s Chopped this Tuesday.
Girón has spent years studying the various cuisines and flavors of Latin America. The Honduran chef serves dishes central to his roots like bean-stuffed baleadas and fried chicken chucos, alongside broader regional staples such as octopus tacos, salchipapas, and pollo a la brasa.
Perquín stands out in the New Jersey dining scene as a destination for Honduran and broader Latin American cuisine, serving a mix of beloved and underrated dishes found across the region. Girón takes pride in introducing flavors that remain underrepresented across much of the Garden State—many with his own unique twist, though authenticity remains a pillar of the concept.
Girón’s menu draws on his own roots, offering diners an authentic look at the home cooking and street food traditions of the region. And you can expect to see that same flair brought to the Food Network stage.
Food Network’s Chopped
Chopped is one of television’s longest-running cooking competition programs. The hit show challenges chefs to create dishes from a basket of mystery ingredients under strict time limits and the live commentary of a rotating panel of judges.
Past baskets have included the likes of chicken feet, dried scallops, cauliflower, and even more obscure ingredients like goat head, reindeer pâté and alpaca hot dogs.
